Miniature Cheesecake
First, allow me to tell you a little bit how I came up with this recipe. So yesterday, while I was browsing Instagram I came across the picture of a mouthwatering mini fruit tart which reminds me of my daughters' request. No, not a fruit tart, she wants me to make her a cheesecakeπ². The fruit tart gave me an idea of a miniature or bite size cheesecake.
Got too excited with the idea, so I headed to the kitchen and luckily I have all the ingredients for the recipe I found online except for fresh raspberry. But that's not a problem since fresh fruit toppings varied according to your preference. Not to mentioned the canned peaches in my pantry to the rescue :).
The original recipe yields 24 standard muffin pan size Raspberry Cheesecake and that is too much for a family of 4, right? So I reduced the amount of ingredients just to satisfy my daughters craving for cheesecake and proceeded with the instruction. Since I made it into a bite size, the baking time will be shorter than the usual, I would say around 20 to 25 minutes.
After 20-25 minutes our house was filled with the mouthwatering aroma of the freshly bake cheesecake. My daughter smelled it from her room and came down just in time for me to have my first taste of the hot cheesecake :) You're right, I didn't wait for it cool down. I wanted to know how it turned out since I didn't follow the original measurement. So, my daughter asked what I baked and when I told her that it is the cheesecake she requested, she rushed beside me and started eating it too while still hot. It was so good, not too rich and not too sweet! The verdict was..... MY FAMILY LOVE IT! πππ

This recipe yields 18 mini muffin pan size cheesecake.
Ingredients:
For the crust:
1/2 cup Graham Cracker
2 Tbsp. melted butter
1 Tbsp. sugar
pinch of cinnamon
Filling:
8 oz Cream Cheese (room temperature)
1/3 cup sugar
1/4 tsp. vanilla extract
1 egg
pinch of salt
Toppings:
Fresh or canned fruits
Preserves or Jams of your choice
Procedures:
- Using your food processor, grind crackers into crumbs and pour into a small mixing bowl. Mix in melted butter, sugar and cinnamon. Preheat oven to 325 degree Fahrenheit.
- Spray your mini muffin liners with non-stick spray and arrange it into your muffin tray. Scoop a little less than a tablespoon of graham crumbs into the muffin liners. Using your thumb or the round end of your small rolling pin, press the crumb at the bottom of the muffin liner to form a crust.
- Pour 1 tablespoon of cream cheese filling in each muffin cups and bake in a preheated oven for 20-25 minutes or until the filling is set and toothpick inserted to the center comes out clean. You will see some cracking on top but it will seal up itself as it cools down and it wont show once you put your prepared fruits or jams on top. Let it cool and refrigerate for at least 2-4 hours (My daughter and I can't wait that long so, we ate it fresh from the oven while still hot πππ oh so good!).
- Top with your favorite fruits or jams. Enjoy?
